Fitting out a pâtisserie and opening a sales outlet.
 

The Air France Foundation has supported Skippy Club Les Enfants du Ballon in setting up a cookery school and training restaurant in Sokone, which will soon be linked to Dakar by a motorway. There is a shortage of qualified staff in the hotel sector in Senegal. Cookery school standards require that the kitchen and pastry sections be kept separate. The project therefore aims to create independent premises with 3 functions: the installation of a class reserved for pastry-making, a room for processing local products and a sales area opening onto the street. This shop will be used to sell cooked products. The use of the restaurant and the shop will enable the school to gain a degree of financial independence. The project is sponsored by Michelin-starred chef Régis Marcon.
